Ingredients

Recipe makes 4 Servings

2 medium Roma tomatoes, halved and pulp scooped out and chopped
6 Oz albacore tuna packed in water, drained and flaked
1 celery stalks, chopped finely
2 Oz diced pimentos, drained
1/4 cup(s) H-E-B Select Ingredients Light Sour Cream
1/2 cup(s) cucumber(s), diced
1/4 cup(s) sweet relish

Instructions

Chop the pulp and place in a large mixing bowl.

Set the tomatoes on a plate and cover with plastic wrap. Refrigerate.

Mix tuna, celery, pimientos, sour cream, cucumber and relish with tomato pulp.

Divide the mixture evenly and stuff each tomato half. Serve chilled.
