Seared Tuna on Scallion Buttered Toast

Ingredients

Recipe makes 8 Servings

1 loaf of scratch made ciabatta bread, sliced thinly
4 Oz salted butter, softened at room temperture
1/2 cup(s) green onions, chopped small
1 large lime juiced and zested, zest reserved for seasoning
12 Oz yellowfin tuna loin steaks, thawed if needed
1/2 Tsp kosher salt, plus more as needed to taste
1/2 Tsp cracked black pepper, plus more as needed to taste

Preheat oven to 400ºF. Place bread on a sheet pan and bake 8 to 12 minutes, or until crispy and toasted.

In a bowl, mix butter with green onions and lime juice, whisk to combine and season to taste. Set aside or refrigerate for later use. This step can also be done in a food processor if preferred.

Place a non-stick pan over medium heat. Season tuna with salt, pepper and lime zest.

Once pan is hot, sear tuna 4 to 5 minutes on one side then flip and cook 3 to 4 minutes, or until internal temperature reads 140 to 145ºF. Or cook to desired doneness.

Once toast cools, spread with butter, slice tuna thinly and place on each. Repeat as needed for each additional toast. Season with salt and pepper as needed and serve.
