Ingredients

Recipe makes 6 Servings

1 Tbsp olive oil
1 Lb boneless, skinless chicken breast, diced
1 Tsp dried thyme
1/2 Tsp dried oregano
1 small white onion, chopped
2 carrots, chopped
3 garlic, chopped
4 tomatoes, chopped
14 1/2 Oz great northern beans, rinsed
5 Oz baby spinach, rough chopped
32 Oz low-sodium chicken broth

Instructions

Heat oil in a large pot on medium-high. Add chicken and brown thoroughly. Remove to a bowl and set aside.

To same pan add dried herbs, onions, carrots, and garlic. Cook until vegetables become tender.

Add tomatoes, beans and spinach. Stir to combine and cook 3 to 4 minutes.

Return chicken to pan and add chicken broth. Bring to a simmer and cook 20 minutes.
