2 Lb red potatoes, size C
2 Tbsp H-E-B Extra Virgin Olive Oil
3 H-E-B Garlic, crushed
1 Tsp H-E-B Iodized Salt
1/2 Tsp H-E-B Black Pepper
1/3 cup(s) H-E-B Parmesan Cheese, shredded

Instructions

Heat oven to 400°F.

Wash potatoes, pat dry and cut into 1/2 inch cubes.

Combine olive oil, garlic, salt and pepper in a large bowl; add potatoes and toss to coat.

Spread onto a large baking sheet and roast for 45-60 minutes, stirring every 20 minutes.

When potatoes are tender and lightly browned, remove from oven and sprinkle with cheese.

Heat oven broiler.

Broil potatoes 4 inches from heat source for 5 minutes or until cheese is melted and crispy.
