1 Tbsp extra virgin olive oil
1 cup(s) tomato, diced
2 cup(s) baby spinach
1 cup(s) quinoa, cooked
4 large eggs, beaten
1/4 cup(s) shredded parmesan cheese

Instructions

Heat olive oil in a large skillet on medium. Add tomatoes and cook 3 to 4 minutes.

Toss in spinach and sauté until wilted and most of liquid is gone.

Add quinoa and continue to cook 2 minutes.

Stir in beaten eggs and cook, stirring gently, until just firm.

Divide among 4 bowls, sprinkle with cheese and enjoy!
