Ingredients

Recipe makes 4 Servings

1 Lb Chicken Breast
2 Prosciutto, sliced
2 cup(s) H-E-B Frozen Wild Rice
1/2 cup(s) green onions, chopped
1 Oz pecans, finely chopped
1 Tsp Italian Seasoning
1 Tbsp Pure Olive Oil
1/3 cup(s) Hill Country Fare Whole Wheat Bread Crumbs

Instructions

Preheat oven to 375°F.

Spray a 9x9 baking dish with non-stick spray.

With a small knife make a 2-inch horizontal slice in the thick side of the chicken breast.

Stuff the pocket with the prosciutto, folding or cutting it to fit.

Empty the rice in to the bottom of the baking dish, mix in green onions and place the chicken on top.

In a small bowl combine pecans, Italian seasoning, olive oil, and breadcrumbs.

Sprinkle the topping over the chicken.

Bake uncovered for 30 minutes.
