1 Tbsp H-E-B Extra Virgin Olive Oil
3 cup(s) simply potatoes obrien hashbrowns
1/4 cup(s) red bell pepper, chopped
1 Tsp garlic, minced
2 cup(s) bunched spinach, packed and torn
6 H-E-B Large Grade AA Eggs
1/4 cup(s) H-E-B 2% Milk
3/4 Tsp H-E-B Iodized Salt
1/2 Tsp McCormick Basil Leaves, crushed
1/4 Tsp H-E-B Ground Black Pepper
1 1/2 cup(s) H-E-B Fancy Shredded Swiss Cheese

Instructions

In large nonstick skillet, heat oil over medium heat.

Add potatoes, red bell pepper and garlic; cook and stir 8-10 minutes or until potatoes are golden brown.

Add spinach; cook and stir 1-2 minutes or until spinach is wilted.

Meanwhile, in small bowl, beat together eggs, milk, salt, basil and pepper until blended.

Stir in cheese; pour into skillet. Smooth out mixture with a spatula to assure even cooking in pan.

Cover; reduce heat to medium-low.

Cook 6-8 minutes or until top surface of egg is almost set.

Place skillet under broiler.

If skillet handle is not oven proof, wrap in triple thickness aluminum foil before placing in oven.

Broil 3-4 inches from heat 2-3 minutes or until egg is set. Watch to make sure it doesn't burn.
