Peanut Butter Mousse with Chocolate Peanut Bark

1 cup(s) crunchy peanut butter
1 cup(s) heavy whipping cream
8 Oz whipped cream cheese
1/2 Tsp kosher or sea salt
1 Tbsp vanilla extract
1 cup(s) powdered sugar
16 Oz H-E-B Baker's Scoop Chocolate Coating
1 cup(s) roasted salted peanuts, crushed

Instructions

In a stand mixer with whisk attachment add peanut butter, heavy cream, cream cheese, salt, vanilla extract and powdered sugar.

Mix on low speed until incorporated, then turn mixer to high speed until mixture is light, very creamy and fluffy.

Portion out mousse evenly into approximately 8 to 10 ramekins.

Cover each with plastic wrap and refrigerate for at least 30 minutes to allow mouse to set up.

While mousse is setting, melt chocolate in microwave following package instructions until fully melted and pourable.

Lay peanuts onto a sheet pan lined with parchment paper pour chocolate evenly over peanuts spread to coat.

Allow chocolate peanuts to cool completely and set up before breaking up and serving as a garnish over mousse.
