Grilled Flat Iron Steak with Charred Onion

1 Lb flat iron steak
4 Oz Wyatt's Tuscan Herb Finishing Butter
1 bunch green onion, ends trimmed
1/4 Tsp kosher salt
1/4 Tsp cracked black pepper
2 Tbsp extra virgin olive oil

Instructions

Preheat grill to 350ºF.

In small sauce pan, melt butter and set aside. Keep warm to top steak and onions.

Season steaks with salt and cracked pepper. Rub a generous amount of olive oil over both sides to keep the meat from sticking to the grill. Season green onions in the same manner and set aside.

Sear steaks on the grill for about 4-5 minutes per side, depending on thickness, and remove when steaks are cooked to your desired doneness. 140ºF internal temp for medium rare. Remove from grill and let rest.

Add seasoned, oiled green onions to the grill. Cook just until soft and show grill marks, about 3-5 minutes.

Pour melted butter over steaks and onions, and serve hot.

**Chef's Note: Don’t melt butter. Instead, just place a hunk of butter over the steaks as they come off the grill and let melt as they rest.
