2 H-E-B Organic Hearts of Romaine
1 hot house cucumbers
1/4 cup(s) red onion, diced
4 Tbsp chives, 3 Tbsp cut into 1 inch pieces, 1 Tbsp chopped
2 Tbsp honey
1 Tbsp H-E-B White Wine Vinegar
1 Tbsp Dijon mustard
1/4 Tsp H-E-B Ground Black Pepper
2 Tbsp extra virgin olive oil
10 Oz carrots, shredded

Instructions

Thinly slice romaine crosswise into shreds.

Peel cucumber; cut lengthwise into quarters and remove seeds. Slice crosswise into thin strips.

Dice onion. Cut chives into 1 inch pieces.

Whisk honey, vinegar, mustard and pepper together in a small bowl.

Slowly add olive oil, whisking constantly, until blended or emulsified. Add 1 teaspoon of chopped chives.

Toss lettuce, carrots, cucumber and onion in a large bowl with dressing. Sprinkle with chives and serve immediately.
