Chipotle Pepper and Lemon Grilled Lobster

Ingredients

Recipe makes 4 Servings

2 whole lobsters
1/2 Tsp chipotle powder
1/2 Tsp black pepper
1/4 Tsp cayenne powder
1/4 Tsp garlic powder
1/4 Tsp salt
2 Oz olive oil
4 lemon, halved
1/4 cup(s) unsalted butter, melted
1/2 cup(s) mayonnaise
3 1/2 Oz chipotles in adobo
1/2 bunch cilantro, chopped

Instructions

Preheat gas grill 10 minutes on medium or charcoal grill until coals are white.

Split lobsters in half with a large Chef’s knife and rinse with cold water. Set aside in a large container.

Combine dry spices in a small bowl.

Pour olive oil over lobsters and season with dry spice mixture.

Squeeze 2 lemon halves over seasoned lobsters.

Place on hot grill, flesh side down. Watch out for flare-ups.

Grill 5-7 minutes per side. Check for doneness. Tail meat will be firm and shell will turn red.

Add remaining lemon halves to grill, cut side down, until dark grill marks appear (3-5 minutes).

Meanwhile, combine mayonnaise and chipotles in a blender until smooth. Stir in cilantro. Place in a small serving dish.

Serve lobsters with dipping sauce and grilled lemons.
