Chicken Breast Con Queso

Ingredients

Recipe makes 6 Servings

6 H-E-B Natural Boneless Skinless Chicken Breasts, halved
1/4 cup(s) lime, juiced
3 Tbsp Hill Country Fare Vegetable Oil, divided
2 garlic, minced
1 Tsp kosher salt
2 Tsp tabasco pepper sauce
1 avocado, peeled and sliced
6 Oz H-E-B Queso Quesadilla, sliced

Instructions

Rinse chicken breasts and pat dry.

Combine lime juice, 2 tablespoons oil, garlic, salt and sauce.

Add chicken and marinate in the refrigerator for 20 minutes or more.

Drain chicken and reserve the marinade.

Heat a large skillet over medium heat, add 1 tablespoon of oil, then add chicken.

Saute for 5 minutes then turn.

Pour the marinade into the pan, cover tightly and cook about 5 minutes more or until chicken is done.

Top each chicken breast with a slice of avocado and cheese.

Cover tightly and steam over low-heat for another minute until cheese is melted.
