Artichoke Pancetta Grilled Flatbread

Ingredients

Recipe makes 2 Servings

2 medium lemons, juiced
2 large globe artichokes
1 1/2 Tsp garlic, finely minced
1 Tsp herbes de Provence
2 Tbsp olive oil
2 naan bread
1/4 kalamata olives, (about 12 olives) quartered
1/4 cup(s) red onion, very thinly sliced
2 1/2 Oz feta cheese, crumbled

Add juice from lemons to 1 quart of water. Working with 1 artichoke at a time, remove leaves and scrape "choke" from artichoke heart. Place trimmed heart in lemon water and soak until ready to cook.

Repeat with remaining artichoke. Bring 3 quarts of water to a boil in a large pan.

Add artichoke hearts to simmering water and cook 5 to 7 minutes, or until they are tender/firm. Remove artichoke hearts and slice. Set aside.

Add garlic and herbs to oil and brush on lumpy side of naan bread. Top with olives, sliced artichoke hearts, onions and feta.

Grill for 4 to 5 minutes with lid closed or until bottom is toasted and cheese is soft. Serve immediately.

Chef's note: This can be a main dish for 2 or a snack/appetizer for 4. Can also substitute marinated artichoke hearts or frozen (defrosted) artichoke hearts.
