Cauliflower is a nutritious, cruciferous vegetable that contains high amounts of vitamin C and it's a good source of folate. It is a popular vegetable choice, as it is available year round and produces almost guilt-free entrées and side dishes. You can use cauliflower as a substitute for rice and potatoes.

How to Select
The head should be firm and tightly closed, with no dark spots. Leaves should be green and fanned out around the cauliflower head. You’ll want to avoid any that are soft.

How to Store
Keep refrigerated and tightly wrapped in a crisper drawer for up to 5 days. To preserve cauliflower, do not wash until ready to use.
