Zucchini Noodles with Simple Roasted Tomato Sauce

Ingredients

Recipe makes 2 Servings

1 Tbsp olive oil
8 Oz H-E-B Zeema or Angel Sweet Tomatoes
1/2 Tsp Himalayan pink salt
2 Tsp fresh garlic, finely minced
1 Tbsp Fini Reduction of Balsamic Vinegar
1 Tbsp fresh basil leaves, finely chopped
10 .7000 Oz Veggie Noodle Co. Zucchini Spirals

Instructions

Heat a large skillet over medium high heat.

Add olive oil, tomatoes and salt until tomatoes skins begin to brown and shrivel.

Smash tomatoes gently with back of a spoon.

Add garlic and balsamic, reduce heat to medium and simmer gently for 3 to 4 minutes.

Add fresh basil and zucchini to skillet and toss to coat.

Cover and simmer 5 to 6 minutes, or until zucchini are tender firm. Serve immediately.

Serve with freshly grated Parmesan cheese if desired.
