1 Tbsp Dijon Mustard
1/4 cup(s) Red Wine Vinegar
3 Peeled Garlic Cloves, smashed
1 1/2 Tsp Dried Mediterranean Oregano
1 Tsp Honey
1 large head of iceberg lettuce, chopped fine
1 cup(s) Grapeseed Oil
1 heads of organic radicchio, chopped small
1 Pt grape tomatoes, cut in half
1/2 cup(s) red onions, thin sliced
1 cup(s) Sliced pepperoncini, drained and rinsed
1 cup(s) Genoa salami, thinly sliced
1 cup(s) provolone cheese slices, diced into small squares

Instructions

In a blender, add mustard, red wine vinegar, garlic, oregano and honey. Blend together and slowly drizzle oil until an emulsion forms.

Season to taste with salt and pepper as needed, set aside or refrigerate for later use. Dressing can be made up to a day in advance.

Toss all salad ingredients together and toss well.

Drizzle with dressing as needed for each serving.

Garnish with more cheese or croutons if desired.
