1 non-stick cooking spray
3 cup(s) flour
1 Tsp baking powder
3/4 cup(s) extra light olive oil
2 cup(s) light brown sugar, packed
4 eggs, large
1 cup(s) semi sweet chocolate chips
1 cup(s) dried cranberries
1 cup(s) sweetened coconut flakes

Instructions

Heat oven to 350°F.

Coat 3 cookie sheets with non-stick spray and set aside.

Sift together the flour and baking powder and set aside.

Whip olive oil and brown sugar using an electric mixer on high speed for 3 minutes.

Beat in the eggs, one at a time, on medium speed for 1 minute.

Add the sifted flour one cup at a time on low speed for 2 minutes.

Stir in chocolate chips, cranberries and shredded coconut with a spoon.

Drop dough by rounded tablespoonful onto prepared cookie sheets.

Bake the cookies for 15 minutes or until golden brown.
