Recipe makes 8 Servings

2 cup(s) fresh peaches, diced
2 Tbsp fresh squeezed lime juice
1/2 cup(s) Driscoll's Raspberries
1/3 cup(s) Sugar in the Raw Liquid Turbinado Cane Sugar
1/4 cup(s) cold water
6 Oz Famiglia Zonin Prosecco Cuvee 1821, approximately 1 bottle (6.32 oz) or more as needed

Instructions

Combine peaches, lime juice, raspberries, liquid sugar, and water in a blender and blend until smooth.

Refrigerate for at least 30 minutes to allow flavors to meld. If desired, strain puree through a fine-mesh sieve to remove all raspberry seeds and particulates.

Serve in fluted champagne or cocktail glasses with approximately 2 tablespoons of peach puree in each glass. Fill with prosecco and enjoy.

Chef's Note: Peach puree will keep up to 5 days in fridge, simply shake before using as puree will separate.
