Crunchy Coconut Chicken Strips

2 large eggs
1/2 cup(s) unsweetened coconut flakes
1 cup(s) H-E-B Panko Bread Crumbs
1/8 Tsp garlic powder
1/8 Tsp kosher salt
1/8 Tsp black pepper
1/8 Tsp cayenne pepper
1 Lb boneless, skinless chicken breast, cut into strips
1 cup(s) canola oil

Instructions

In a medium bowl, beat eggs and set aside.

In a second medium bowl, combine coconut flakes, panko and seasonings, and mix.

Dip one chicken strip into beaten eggs, covering thoroughly, then roll in breading mixture until chicken is completely coated. Repeat until all strips are coated.

Pour oil in a large skillet with high sides and heat on high.

When oil is hot, pan-fry strips for 7 to 8 minutes until golden brown and serve with your favorite dipping sauce.
