Crouton Crusted Salmon

2 cup(s) H-E-B Select Ingredients Seasoned Premium Croutons
2 salmon fillets, 4 to 6 oz.
2 Tbsp extra virgin olive oil, plus more as needed
1/4 cup(s) fresh parsley, minced fine
2 Tbsp fresh lemon juice, as needed for topping

Instructions

In a food processor add croutons and pulse until texture is that of breadcrumbs.

Set a medium sized non-stick pan over medium heat, allow to get hot.

Brush salmon fillets with olive oil, press fillets into breadcrumbs to completely coat top side of salmon.

Add salmon to pan crust side down, skin side up. Sear for 4 to 5 minutes or until breadcrumbs are nicely browned and crispy.

Flip salmon over and continue to cook skin side down until internal temp of salmon reaches at least 150F.

Serve salmon with chopped parsley and lemon juice. Season to taste as needed.
