Chocolate Covered Bacon Bites

10 Oz dry cured bacon
8 Oz H-E-B Dark Chocolate Candy Coating
2 medium jalapeño pepper(s), sliced very thinly

Instructions

Heat oven to 400ºF. Line a baking sheet with parchment paper and set aside.

Place a baking rack on a rimmed baking sheet. Spread out bacon in a single layer then top with another baking rack facing downward so that bacon cooks completely flat. Cook to medium crisp (or desired crispness).

Allow bacon to cool completely then cut into 1 inch pieces. Set aside briefly.

Melt chocolate according to package directions then dip bacon completely in chocolate to coat. Place on prepared baking sheet.

Top each with a slice of jalapeño and chill briefly until hardened.
