Apple Pie with Sugar Cookie Streusel

Ingredients

Recipe makes 8 Servings

7 medium Fuji apples, cored, peeled and thinly sliced
1/3 cup(s) brown sugar
1/4 cup(s) corn starch
3/4 Tsp cinnamon
1/4 Tsp ground fresh nutmeg
1 1/2 Tbsp lemons, juiced
1/2 Tsp kosher salt
1 The Texas Pie Company Original Pie Dough Puck, thawed and set out at room temperature
4 Tbsp unsalted butter, cut into dime size pieces
6 Pillsbury Refrigerated Sugar Cookie Dough, 6 individual cookies, flattened and pulled apart

Instructions

Preheat oven to 350ºF.

In a bowl, combine apples, sugar, corn starch, cinnamon, nutmeg, juice and salt. Toss to combine all ingredients thoroughly. Allow to rest and prepare the dough.

Roll out dough on a sheet of parchment paper to a 10 inch circle.

Place pie dish on top of flattened crust and flip it over so crust is to fall evenly into dish. Gently remove parchment paper and crimp dough.

Place filling into crust and smooth out evenly.

Place butter tabs over top of apples.

Prepare top crust by tearing off pieces of cookie dough the size of a quarter, and placing them around apples to form a streusel crust.

Bake 35 to 45 minutes until both the dough and crust are golden brown.

Cool for 30 minutes so filling has time to set before cutting.
