  • 10 fl oz Italian dry white wine
  • 1 l Chicken stock, heated to boiling
  • 0.1 oz Saffron
  • 1 tsp Salt
  • 1/2 tsp Ground black pepper
  • 1 oz Parmigiano Reggiano, grated

Instructions

  1. In a sauté pan, heat half the butter and sweat the onions over medium heat for about 3 to 4 minutes.
  2. Add rice and sauté while stirring continuously so the rice doesn't brown.
  3. Pour in wine, stir to combine, and continue to heat for 1 to 2 minutes until wine evaporates completely.
  4. Add about 1/4 of hot chicken stock to rice, stirring continuously. Allow liquid to be completely absorbed before adding more. Repeat until most of the stock has been used.
  5. Add saffron and stir to combine, continue to cook rice until al dente, about 8 to 10 minutes.
  6. mix in salt and pepper, and remove from heat.
  7. Cook the rice al dente, about 8-10 minutes.
  8. Stir in remaining butter and Parmigiano cheese. Adjust with broth if rice is still not al dente. Let rest a minute before plating.
