  • Ingredients

    Sugar, Spices, Ascorbic Acid.
  • Makes 6 Quarts: 18-20 lbs peaches (about 64 medium); 2-1/2 cups sugar; 4-1/2 cups water; 2/3 cup Mrs. Wages White Distilled Vinegar (5% acidity); 1 pouch Mrs. Wages Spiced Peaches Seasoning Mix. Prepare and process home canning jars and lids according to manufacturer's instructions for sterilized jars. Wash peaches, peel, remove pit, and cut peaches into six slices. This should yield at least 16 cups peach slices. Combine sugar, water, and vinegar with 1 pouch Spiced Seasoning Mix in a large non-reactive pot. Do not use aluminum. Bring mixture just to a boil over medium heat. Add prepared fruit and simmer (200 degrees F) for 5 minutes. Remove from heat. Ladle peaches and sauce into sterilized jars, filling evenly. Leave 1/2-inch headspace. Remove air bubbles, wipe rim and cap each jar as it is filled. If more liquid is needed for proper headspace, add a mix of 1 part vinegar and 7 parts water. Process pints 10 minutes, (processing time listed is for altitudes less than 1000 feet. At altitudes of 1000 feet or more increase processing time 1 minute for each 1000 feet of altitude), quarts 20 minutes, (processing time listed is for altitudes less than 1000 feet. At altitudes of 1000 feet or more increase processing time 1 minute for each 1000 feet of altitude) in a boiling water bath canner. Test jars for airtight seals according to manufacturer's directions. If jars do not completely seal, refrigerate and consume within 2 weeks. Product is ready to eat after 24 hours. Serve chilled or warmed, as desired.
