  • Oven: Preheat oven to 325°F. Season lamb as desired and place on a rack in a shallow pan. Oven roast for 1-1/2 hours. Remove at an internal temperature of 140°F for medium-rare or 150°F for medium. Let lamb rest for 10 minutes before serving. Other Option: Smoke lamb at 300°F for 60 - 90 minutes.
