  • For 10 cups stock: Use 5 lbs of bones. Roast bones with large chunks of onion, carrot, and celery in an oiled pan. Roast for 40 minutes in a 425 degree oven. Stir to prevent burning. Move to stockpot. Cover with 16 cups water. Add parsley, thyme, bay leaves, & celery leaves. Simmer over low heat for 8 hours.
