White Wine Lump Crab Topping

Recipe makes 2 Servings

1/2 Tsp parsley, minced
1/2 Tsp tarragon, minced
1/2 Tsp chives, minced
2 Tbsp unsalted butter
1 Tsp shallots, minced
1/2 Tsp garlic, minced
4 Oz jumbo lump crabmeat
1 fl oz dry white wine
1 Tsp salt
1 Tsp black pepper

Preheat sauté pan 5-10 minutes on medium heat.
Meanwhile, blend fresh herbs in a small bowl. Set aside.
Add butter to hot pan and turn heat to medium-high.
Sauté shallots and garlic 1 minute.
Add crabmeat and continue to cook 2-3 minutes.
Splash in wine or Vermouth, and add salt & pepper
Toss with ½ teaspoon fresh herb mixture.
