
Watermelon Salsa Fresca with Coconut Sugar

Ingredients
Serves 6
- 2 cup(s) Watermelon, finely chopped
- 1/2 cup(s) hot house cucumbers, finely chopped
- 1/2 cup(s) honeydew melon, finely chopped
- 1/4 cup(s) red onions, thin sliced
- 1 large jalapeño pepper, seeded and sliced
- 1/4 cup(s) fresh cilantro, minced
- 1 tbsp fresh basil, chopped
- 1 tbsp fresh mint, chopped
- 2 each lime, juiced
- 1/4 cup(s) coconut sugar
- 1/4 cup(s) water
Instructions
- Mix all ingredients, except coconut sugar and water, and chill at least 30 minutes to allow flavors to blend.
- In a small saucepan place 1/4 cup of coconut sugar with 1/4 cup of water and bring to a simmer to melt the sugar mixture.
- Cool the coconut and sugar mixture in refrigerator then pour over the salad like a dressing, toss everything to combine.
