Recipe makes 4 Servings

1 Tbsp olive oil
8 Oz Lightlife Soy Organic Tempeh, crumbled
1 cup(s) small onion, diced
1 package lower sodium taco seasoning
14 1/2 fl oz H-E-B Fire Roasted Diced Tomatoes with Chilies
8 hard taco shells
1 cup(s) tomato, chopped
1 cup(s) iceberg lettuce, shredded
1 large hass avocados, seeded and sliced

Heat oil in a large non stick pan over medium high flame. Add in crumbled tempeh and diced onion. Cook for several minutes until onion is tender and tempeh begins to brown.
Add in taco seasoning and fire roasted diced tomatoes with the liquid. Stir to combine then bring to a simmer.
Allow the tempeh to simmer for 4 to 5 minutes then remove from heat.
Serve in a hard taco shell with tomato, lettuce and avocado.
