Monterey Jack Spinach Mushroom Scramble

2 Tsp Hill Country Fare Canola Oil
2 Tsp red onion, chopped
1 cup(s) mushrooms, thin sliced
1 cup(s) H-E-B Baby Spinach, thin sliced
1/8 Tsp crushed red pepper
1/2 cup(s) H-E-B Real Egg
1/4 cup(s) H-E-B Fancy 2% Shredded Monterey Jack

Heat heavy bottom skillet over medium heat for 2 minutes.
Add canola oil, red onion, and mushrooms.
Stir fry 3 minutes or until mushrooms are tender.
Add spinach leaves and crushed red pepper and stir fry for 2 minutes.
Add H-E-B Real Egg and cook until egg is at desired doneness.
Top with cheese.
