15 Oz King Arthur Gluten Free All Purpose Baking Mix
2 cup(s) unsweetened almond milk
2 egg
4 Tbsp coconut oil, melted, plus more for cooking
1 Tbsp vanilla extract
1/2 cup(s) H-E-B Organics Bitter-Sweet Chocolate Mini Baking Chips

Combine gluten free baking mix, almond milk, egg, melted coconut oil, and vanilla together in a medium sized bowl.
Melt a teaspoon of coconut oil in a large non-stick skillet over medium flame.
Using a measuring cup, pour 1/4 cup of batter into preheated pan. Top with chocolate chips, then cook until bubbles form and edges appear dry. Flip and continue to cook for 1 minute more.
Continue until all the batter is cooked.
