English Muffin Tostadas with Avocado Chive Spread

Recipe makes 6 Servings

1 large Hass avocado, pit removed, flesh scooped out
1/2 cup(s) fresh chives, minced
1/4 cup(s) lemon juice
1/4 cup(s) extra virgin olive oil
3 English muffin, plus more as desired
1 cup(s) Cotija cheese, grated, plus more as needed
1 cup(s) shredded lettuce, as needed
1/3 cup(s) fresh cilantro, finely chopped, as needed for garnish

In a food processor, combine avocado, chives, lemon juice and olive oil. Pulse until smooth (add water if needed to achieve spreading consistency). Season to taste.
Cut English muffins in half and toast until nicely crisp.
Spread avocado mixture on each toasted muffin half then top with Cotija cheese, shredded lettuce and cilantro.
