Recipe makes 4 Servings

1 Tbsp canola oil, divided
12 Oz boneless, skinless chicken breasts, diced
1/4 Tsp ground ginger
2 cup(s) H-E-B Peas & Carrots, frozen
1/2 cup(s) green onions, chopped
2 garlic, minced
2 large eggs, beaten
2 cup(s) brown rice, cooked
2 Tbsp Kikkomon All-Purpose Less Sodium Soy Sauce

Place a large non-stick skillet over medium-high heat and 1/2 tablespoon oil.
Season chicken with ginger and cook several minutes until cooked through then transfer to a plate.
Add remaining oil to same pan as well as peas and carrots, green onions and garlic; sauté 2 minutes.
Push veggies to side, add eggs and cook until slightly scrambled.
Return chicken to pan along with cooked rice and soy sauce. Stir to combine and cook several minutes.
