
Cheesy Rotini Pasta

Ingredients
- 8 oz Rotini pasta
- 1 Bacon slice
- 1 tbsp Extra virgin olive oil
- 1 cup Diced white onion, diced
- 1 Medium fresh zucchini squash, diced
- 1 cup Frozen green peas
- 2 Garlic cloves, minced
- 2 tbsp All-purpose flour
- 1 1/2 cups Whole milk
- 1/2 cup Shredded sharp cheddar cheese
- 1/4 cup Grated parmesan cheese
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Meanwhile, cook bacon until crisp, remove from pan and drain on a paper towel.
- Add olive oil, onions, zucchini, peas and garlic to the same pan. Cook, stirring constantly, until onions become translucent.
- Next, add flour and cook 1 minute. Slowly pour in milk, stirring constantly, until sauce thickens slightly.
- Stir in cheeses then combine with pasta and mix well. Crumble bacon over the top and serve.
