Al Pastor Lettuce Wraps

Recipe makes 4 Servings

1 Tbsp grapeseed oil
1 1/2 Lb Mi Tienda Carne Al Pastor, seasoned Mexican style pork
8 Oz pineapple tidbits, (or chopped fresh pineapple)
10 Oz H-E-B Power Slaw
1/4 cup(s) green onion, finely chopped
1/2 cup(s) Mexican cream
1 Tsp fresh lime zest
1/2 Tsp salt
2 Tsp honey
12 H-E-B Lettuce Scoops, (can also use butter lettuce leaves)
1/4 cup(s) fresh cilantro, leaves only, finely chopped

Heat a skillet over medium-high.
Add oil and al pastor meat to pan and break apart chunks as it cooks. Sear well stirring occasionally for 12 to 15 minutes, or until meat is fully cooked.
While meat is cooking drain pineapple and add to medium sized bowl. Add power slaw and green onion bowl. Stir to combine and set aside.
In a small bowl whisk together crema, lime zest, salt and honey.
Add vegetable mixture to hot pan for the last minute of cooking and remove from heat.
Spoon meat into lettuce scoops and top with crema and cilantro.
Chef's note: Garnish with chopped avocado if desired.
