Zucchini and Shrimp Linguine

Unsaved Zucchini and Shrimp Linguine

Ingredients

  • 17.6 oz Linguine
  • 3 tbsp Unsalted butter
  • 3 tbsp Extra Virgin Olive Oil
  • 2 Medium zucchini, sliced into rounds
  • 1/2 cup Cherry tomatoes
  • 2 Fresh garlic cloves, minced
  • 1/2 tsp Crushed Red Pepper Flakes
  • 1 lb Large, raw shrimp, peeled and deveined
  • 1/2 cup Chardonnay
  • 1 tsp Kosher salt
  • 1 tbsp Fresh lemon juice, juice
  • 3 tbsp Fresh Italian parsley, chopped

Instructions

  1. Cook pasta according to package directions. Save 1/4 cup of pasta water, then drain pasta and set aside.
  2. Add butter and olive oil to a medium skillet over medium-high heat.
  3. When butter is melted, add zucchini and sauté 2 minutes, stirring occasionally.
  4. Add cherry tomatoes, garlic, and red pepper flakes, stir to combine then sauté for another 2 minutes.
  5. Season shrimp with salt and add to the pan. Cook 2 minutes then flip and cook for an additional minute.
  6. Pour in white wine and reduce by half. Once wine has reduced, add reserved pasta water and cooked pasta. Toss to combine and bring to a simmer.
  7. Remove from heat, add lemon juice and parsley. Mix to combine and serve.
