
Zucchini and Shrimp Linguine

Ingredients
- 17.6 oz Linguine
- 3 tbsp Unsalted butter
- 3 tbsp Extra Virgin Olive Oil
- 2 Medium zucchini, sliced into rounds
- 1/2 cup Cherry tomatoes
- 2 Fresh garlic cloves, minced
- 1/2 tsp Crushed Red Pepper Flakes
- 1 lb Large, raw shrimp, peeled and deveined
- 1/2 cup Chardonnay
- 1 tsp Kosher salt
- 1 tbsp Fresh lemon juice, juice
- 3 tbsp Fresh Italian parsley, chopped
Instructions
- Cook pasta according to package directions. Save 1/4 cup of pasta water, then drain pasta and set aside.
- Add butter and olive oil to a medium skillet over medium-high heat.
- When butter is melted, add zucchini and sauté 2 minutes, stirring occasionally.
- Add cherry tomatoes, garlic, and red pepper flakes, stir to combine then sauté for another 2 minutes.
- Season shrimp with salt and add to the pan. Cook 2 minutes then flip and cook for an additional minute.
- Pour in white wine and reduce by half. Once wine has reduced, add reserved pasta water and cooked pasta. Toss to combine and bring to a simmer.
- Remove from heat, add lemon juice and parsley. Mix to combine and serve.
