
Yogurt Olive Oil Cake

Ingredients
Serves 12
- 2 cup(s) all purpose flour
- 1 cup(s) granulated sugar
- 1 cup(s) whole milk Greek yogurt
- 1 cup(s) good quality extra virgin olive oil
- 3 large eggs
- 1 tbsp lemon zest
- 1 tbsp orange zest
- 1 tbsp pound cake flavor extract
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp fine sea salt
Instructions
- Preheat oven to 350ºF. Grease a 9-inch round cake pan and set aside.
- In the bowl of a stand mixer, add all ingredients and turn mixer on lowest speed. Mix until everthing just begins to come together.
- Once mixture is fairly well incorporated, turn mixer up to medium-high speed and mix for exactly 2 minutes, scraping down sides of bowl as needed.
- Pour into prepared cake pan, evenly spreading batter with a spatula.
- Bake for 30 to 45 minutes or until a toothpick inserted in center of cake pulls out clean.
- Cool for at least 30 minutes before removing from pan, cutting and serving.
