
Whole Wheat Moroccan Chicken Meatballs

Serves 6
- 2 lb lean ground chicken
- 5 each H‑E‑B 100% Whole Wheat Sliced Bread, cut into small pieces
- 2 large eggs
- 1/2 cup(s) fresh cilantro, chopped fine
- 1/3 cup(s) fresh mint, chopped fine
- 6 oz Zwïta Smoky Traditional Harissa
- 1/2 cup(s) cold water
- 1 tsp kosher salt, plus more as needed to taste
- 1 tsp cracked black pepper, plus more as needed to taste
Instructions
- In a bowl combine chicken, bread, eggs, cilantro, mint, harissa paste, water, salt and pepper. Mix well to combine. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Preheat oven to 375ºF. Spray a 9x13 inch oven-safe baking dish liberally on all sides. Scoop and roll meatballs to standard size, approximately 3 oz. balls.
- Place in baking dish and bake 25 to 30 minutes or until browned and internal temperature reaches at least 165ºF.
- Remove from oven and cool before serving. Serve with red sauce or yogurt. For a complete meal, serve over rice or pasta. Season to taste as needed.
