
Weeknight Pork Burnt Ends

Ingredients
Serves 6
- 3 lb Boneless Boston Butt Pork Roast, cut into approximately 2 inch chunks
- 1 1/2 tbsp Adams Reserve Gunpowder House Rub Seasoning, or as needed to coat pork pieces
- 1/4 cup(s) avocado oil
- 1 cup(s) Better Than Good Traditional Texas BBQ Sauce, plus more as needed for serving
Instructions
- Season cut pieces of pork liberally with seasoning and set aside. Preheat oven to 400°F.
- Place oil in the bottom of a pressure cooker, add seasoned pork, and close the lid. Set pressure cooker to manual setting, low to medium pressure, for 1 hour.
- Vent pressure valve safely. Once pork is fork tender, remove to a baking dish using a slotted spoon. Add BBQ sauce and mix well to coat pork.
- Place in oven and roast for 15 to 20 minutes or until pork and sauce just start to caramelize and darken in color.
- Remove from oven and serve with more BBQ sauce as needed. Serve on a sandwich or over rice.
