
Weeknight One Pan Pot Roast

- 1 tbsp olive oil
- 1 1/4 cup(s) baby carrots, (about 8 ounces)
- 8 oz baby bella mushrooms, sliced
- 2 each Fresh Rosemary, leaves removed from woody stems
- 20 oz Fully Cooked Pot Roast, (thawed, if frozen)
- 8 oz Baby Potatoes Homestyle
Instructions
- Preheat oven to 375°F.
- In a large oven-safe skillet heat oil and add mushrooms. Stir and cook about 5 minutes, or until well browned. Add rosemary and carrots and stir to combine
- Reduce heat to medium. Unwrap fully cooked pot roast from plastic pouches and place in pan with mushrooms. Cover pan and bring to a simmer over medium heat.
- Place covered pan in oven and roast 20 minutes, or until pot roast is fully warmed through and carrots are tender. While pot roast is cooking, microwave potatoes according to package directions.
- Remove from oven and serve pot roast, mushrooms and carrots with potatoes. Drizzle with any excess juices from pan.
- Chef's Note: Serve with crusty bread to soak up all the great juices.
