
Weekday Rojo Rubbed Ribs

- 3 lb Natural Pork Loin Baby Back Ribs, 1 rack approximately 3 to 4 lbs.
- 1/2 cup(s) SMP Rub Rojo Wet Seasoning
Instructions
- Line a sheet pan with non-stick foil. Place ribs on pan and liberally brush all sides with wet rub.
- Preheat oven to 350ºF. While oven is pre-heating, allow ribs to sit at room temperature and marinate. (Overnight marinating is best if time permits).
- Cover ribs loosely with foil. Bake for 1 hour, then remove foil and cook an additional hour uncovered or until internal temperature is at least 190ºF.
- Remove ribs from oven and immediately brush with remainder of wet rub while ribs are still hot.
- Allow to rest for at least 15 to 20 minutes before serving. Season to taste as needed.
- Chef's Note: This rub is also great as a marinade for pork tenderloin.
