Verde Grilled Potato Salad

Unsaved Verde Grilled Potato Salad

Ingredients

  • 1 Large jalapeño peppers, stem removed
  • 1 cup Fresh cilantro, rough chopped
  • 2 Garlic cloves
  • 1 tbsp Dijon mustard
  • 1/4 cup White wine vinegar
  • 1 tsp Honey
  • 1/2 tsp Kosher salt
  • 1 cup Grapeseed oil, divided use
  • 2 lb Frozen Baby Potatoes Italian Flavor, cooked in microwave according to package directions
  • 1 Medium red onion, cut into quarters with stem attached
  • 1 cup Cherry tomatoes, sliced in half
  • 1/3 cup Cotija cheese, crumbled

Instructions

  1. Preheat grill to high. Combine first seven ingredients in a blender and puree. With blender running on medium-high, slowly add in 1/2 cup grapeseed oil in a thin stream until emulsified. Place in an airtight container in the fridge while potatoes grill.
  2. Cut heated potatoes in half and place in a bowl with remaining grapeseed oil and quartered red onions.Toss to coat then grill for 7 to 10 minutes, turning halfway through. Potatoes should be marked and red onions softened.
  3. Return potatoes to bowl and place red onions on a cutting board. Cut into smaller pieces and add to bowl along with dressing and tomatoes. Toss to coat evenly and garnish with Cotija cheese.
