Unsaved Vegetarian Gumbo

Ingredients

  • 1 tbsp extra virgin olive oil
  • 4 each garlic clove, minced
  • 1 small yellow onions, chopped
  • 1 each red bell pepper, cored, seeded and chopped
  • 1 each Green peppers, chopped
  • 2 tbsp all purpose flour
  • 2 cup(s) Low sodium vegetable broth
  • 14 1/2 fl oz Canned diced fire roasted tomatoes
  • 2 cup(s) baby bella whole mushrooms, quartered
  • 2 cup(s) okra, frozen
  • 1 tbsp Cajun seasoning spice blend

Instructions

  1. Heat a large Dutch oven on medium-high with oil.
  2. Add garlic, onion and bell peppers and cook until onions are translucent.
  3. Stirring constantly, sprinkle in flour and continue to cook 4 to 5 minutes.
  4. Add in vegetable stock and bring to a simmer.
  5. Stir in remaining ingredients, bring back to a simmer, cover, reduce heat to a low simmer and cook until well thickened.
  6. Chef's note: Serve over brown rice or with crusty bread.
