
Vegetarian Chorizo Refried Beans

Ingredients
- 1/4 cup Olive oil
- 1 Medium yellow onion, medium dice
- 1 tbsp Minced garlic
- 3 Canned Pinto Beans, drained and rinsed
- 2 tbsp Chorizo Seasoning Paste
- 2 tsp Salt
- 2 cups Water
Instructions
- Heat a large, heavy bottomed skillet or pot over medium heat. When hot, add oil then onions and garlic. Cook for 3 minutes, stirring frequently, until onions are softened.
- Add pinto beans and chorizo paste, stirring well until beans are coated in paste. Cook for 3 minutes, stirring occasionally. Add salt and water and bring to a simmer for 10 minutes.
- Remove from heat and using a stick blender, potato masher, or stand blender, blend beans until smooth. Return to heat and cook for 2 minutes to allow flavors to blend.
