
Two-Bean Vegetarian Chili

Ingredients
- 1 tbsp Olive oil
- 1 Medium white onion(s), chopped
- 1 Poblano pepper(s), chopped
- 1 tbsp Hill Country Fare Minced Garlic in Oil
- 1.2 oz H-E-B Select Ingredients Texas Chili Seasoning Mix
- 29 oz H-E-B Select Ingredients Crushed Tomatoes
- 15 oz H-E-B Black Beans
- 15.5 oz H-E-B Dark Red Kidney Beans
- 2 cups Whole kernel corn, frozen
- 12 oz Frieda's Soy Taco Meatless Taco Filling
Instructions
- Heat oil in a 5 or 6 quart pot over medium-high heat.
- Sauté onion and pepper for 3 minutes.
- Stir in garlic, chili mix and tomatoes; sauté 3 more minutes.
- Bring to a boil; reduce heat to medium-low and simmer for 10 minutes.
- Rinse and drain beans.
- Stir beans and corn into chili; add meat substitute. Return to a boil.
- Add 1-1 1/2 cups water (if needed) until chili reaches desired consistency.
- Simmer 5 more minutes, then ladle into bowls and serve while hot.
