
Turmeric Saffron Rice

Serves 6
Ingredients
- 2 tbsp Ghee
- 2 tbsp Extra virgin olive oil
- 1 cup White onions, diced
- 0.5 oz Saffron, approximately 1 large pinch
- 2 tsp Cumin seeds
- 1 tbsp Ground turmeric
- 1 cup Basmati rice
- 2 cups Water, or broth of your choice for extra flavor
Instructions
- Cut a piece of parchment paper in a circle to fit a medium-size pot with a tight fitting lid. Set aside.
- Place pot over medium heat. When pan is hot, add ghee and oil.
- Once ghee is melted and bubbling, add onions, saffron, cumin seeds, turmeric and a large pinch of salt. Sauté until onions are just soft then add rice.
- Stir-fry rice for about 3 to 5 minutes or until rice begins to turn opaque and starts to toast slightly. Add water or broth and bring to a simmer.
- Once liquid comes to a simmer, turn heat down to low, and place circular piece of parchment paper directly on top of water and rice.
- Place lid on pot and cook for at least 20 minutes. Parchment paper will allow rice to steam and cook more evenly by trapping heat and moisture.
- Once rice is cooked, turn off heat and remove parchment. Fluff rice with a fork and season to taste as needed.
