
Turmeric Rice with Peas

Ingredients
- 3 tbsp Liquid Coconut Oil
- 2 cups Basmati Rice
- 1 tbsp Turmeric, ground
- 4 cups Vegetable broth
- 1 cup Frozen peas
- 1/2 cup Fresh cilantro, chopped
- 1/4 cup Cashews, chopped
Instructions
- Heat oil in a medium sized sauce pan over medium-high temperature.
- Add in rice and cook until it is fragrant, then stir in turmeric.
- Pour in the broth and bring to a boil, reduce to a simmer, add peas and cover. Cook for 15 minutes and remove from heat, then let stand with lid on.
- Remove lid, add in cilantro and cashews, fluff with a fork and serve.
