Turmeric Rice with Peas

Unsaved Turmeric Rice with Peas

Ingredients

  • 3 tbsp Liquid Coconut Oil
  • 2 cups Basmati Rice
  • 1 tbsp Turmeric, ground
  • 4 cups Vegetable broth
  • 1 cup Frozen peas
  • 1/2 cup Fresh cilantro, chopped
  • 1/4 cup Cashews, chopped

Instructions

  1. Heat oil in a medium sized sauce pan over medium-high temperature.
  2. Add in rice and cook until it is fragrant, then stir in turmeric.
  3. Pour in the broth and bring to a boil, reduce to a simmer, add peas and cover. Cook for 15 minutes and remove from heat, then let stand with lid on.
  4. Remove lid, add in cilantro and cashews, fluff with a fork and serve.
