Tunisian Chickpea Stew- Lablabi

Unsaved Tunisian Chickpea Stew- Lablabi

Ingredients

  • 1/4 cup Extra virgin olive oil
  • 1 tbsp Tomato paste
  • 1 tbsp Harissa paste
  • 8 oz Fresh cut mirepoix, (equal parts carrot, celery and onion)
  • 1 tbsp Fresh garlic cloves, minced or zested
  • 1 tbsp Ground cumin
  • 1/2 tsp Ground coriander
  • 31 oz Canned garbanzo beans, do not drain liquid
  • 2 cups Vegetable broth
  • 1/4 cup Fresh lemon, juiced
  • 1/4 cup Fresh cilantro, roughly chopped
  • 1/3 cup Green onions, finely chopped

Instructions

  1. Place a large soup pot over medium-high heat and add oil, tomato paste and harissa. Stir-fry for 3 to 5 minutes or until tomato paste begins to darken.
  2. Add mirepoix, garlic, cumin and coriander. Sauté 4 to 5 minutes or until veggies are just soft.
  3. Add in chickpeas with liquid, vegetable broth and lemon juice. Bring to a boil then reduce heat to low and cook for 15 to 20 minutes covered.
  4. Just before serving, add chopped cilantro and green onions. Season to taste as needed.
