
Tropical Arroz con Leche

Ingredients
Serves 4
- 1 cup(s) long grain rice
- 1 small cinnamon stick, or substitute 1/2 teaspoon ground cinnamon
- 2 cup(s) coconut water, from a fresh, drinkable young coconut
- 2 cup(s) coconut milk
- 1/4 cup(s) sugar, to taste
- 1 large lime, zest only, about 2 teaspoons
- 1 cup(s) fresh pineapple, finely diced
- 1 medium yellow dragon fruit, diced
- 2 small kiwi, peeled and diced
Instructions
- Add rice to a small saucepan along with cinnamon stick, coconut water and a pinch of salt. Add additional water if needed to get to 2 cups of liquid. Bring to a simmer over medium heat.
- When liquid starts to bubble, cover with a lid and turn heat down to medium-low. Cook for 10 to 15 minutes or until liquid is mostly absorbed.
- Add coconut milk. Stir and simmer uncovered for an additional 15 to 20 minutes or to desired texture.
- Stir through sugar and lime zest. Serve warm or chilled and top with diced pineapple, dragon fruit and kiwi as desired.
