
Toasty Cinnamon Concha Ice Cream Sandwich

- 4 each bakery conchas
- 3 tbsp salted butter, softened to room temperature
- 2 tbsp cinnamon sugar
- 1 1/2 pt Creamy Creations Mexican Hot Chocolate Ice Cream or flavor of your choice
Instructions
- Heat oven to 400ºF. Slice conchas in half like a hamburger bun. Lightly butter cut sides of each concha and sprinkle lightly with cinnamon sugar. Place on a baking sheet, cut-side up.
- Bake 4 to 5 minutes or until toasted to a golden brown. Remove from oven and cool completely.
- Soften ice cream at room temperature for 5 to 10 minutes or just until easy to scoop. Place 4 small scoops on the bottom half of each conch and spread out carefully. Place top half of conch on top of ice cream and serve immediately.
